Moist and Delicious Banana Bread

This is another recipe that my mother has been making for years. It took her a long time to find the perfect Banana Bread recipe and THIS IS IT.  Nothing beats this amazing bread so I’m sticking with this tried and true favorite. I hope you enjoy it as much as my family. It makes only one loaf so be prepared to make a double batch or watch it disappear in a day or two!

Ingredients

2 cups flour

1 teaspoon baking powder

1- 1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup shortening

1 cup sugar

2 eggs

1 cup overly ripe bananas, mashed (approximately 3 medium)

1/2 cup chopped nuts

Directions

Stir together flour, baking powder, baking soda and salt in medium bowl.

In large bowl beat shortening, sugar and eggs until well blended.

Add dry ingredients to sugar mixture and mix. Stir in mashed banana (make sure the bananas are mushy/very over ripe as it is the key to awesome banana bread) and nuts if desired.

Pour into greased loaf pan and bake at 350 degrees for 60-70 minutes or until toothpick inserted in center comes out clean.

Cool in loaf pan for 15 minutes before removing. Cool completely on wire rack and enjoy!

    Oh that looks good but I would have to argue that mine is better lol. I tried forever to get mine just right by starting out with a recipes from my husband’s great aunt who was 89 when she gave it to me. It needed some tweaking though because i love moist banana nut bread. If you want to see the different ingredients let me know and I will email them to you. you know, just to try and see if there is a difference haha.

    I add cinnamon, nutmeg and allspice to my banana bread. We like the combination of the banana and spice flavors.

      Kara, I so sorry to hear that you were disappointed with this recipe. I’ve never felt it was bland but I would say that to get a strong banana flavor with any baked goods, it is important to use bananas so ripe it would be nasty to eat them. Bananas that are so mushy you barely have to mash them. Basically the peel is virtually all brown. That would definitely make a difference. Otherwise the only thing I can suggest is that you add a little cinnamon if that is the type of flavor that you are accustomed to with banana bread. If you like the texture and moisture then perhaps you can use this as a base to achieve just the right flavor for your tastes.

    Sounds delicious! When I make banana bread I usually add a little bit of cinnamon, it gives it a little bit more flavor. You should try making it with cinnamon and see how you like it.
