Cinnamon roll pancakes are a restaurant favorite in chains like Denny’s, IHOP and Cheesecake Factory, but they can also be found in your locally owned diners or seen on social media, including TikTok. Now you can enjoy them at home anytime with this simple recipe.
The pancakes, are the perfect pancake cinnamon roll combo. It brings two breakfast favorites to one plate. Smothered in gooey brown sugar goodness.
Cinnamon Roll Pancakes Ingredients
To make these delicious homemade pancakes, you’ll need the following simple ingredients:
Homemade Pancakes
- egg
- vanilla extract
- milk
- flour
- baking powder
- salt
Cinnamon Swirl Ingredients
- butter
- brown sugar
- cinnamon
White Icing Ingredients
- white granulated sugar
- powdered sugar
- whole milk
cream cheese frosting (optional): You can buy the tub variety or if you’d like to stick with an entirely homemade recipe, try this cream cheese frosting recipe. If you are thinking are doubtful you can handle all that sweetness, you can opt out of the cream cheese frosting and just have the white icing instead or serve it on the side!
You’ll also need at least one to two piping bags and an optional 1M tip if you’d like to create the pretty swirled frosting ribbons shown. A piping bag is best to create the cinnamon swirl pancakes but if you have no piping bag available, you can substitute a ziploc baggy instead and snip off the end. Don’t forget some additional butter for your skillet.
How to Make Cinnamon Roll Pancakes
Let’s make a cinnamon roll pancake! Start by combining your melted butter, brown sugar, and cinnamon in a small bowl. You can also melt the butter in a measuring cup in the microwave and just add the rest of the ingredients.
Mix well and pour into a piping bag. If you don’t have a piping bag, a ziploc bag will work in a pinch! Set aside.
To create the pancake batter, you’ll want to start by combining your dry ingredients in a large bowl. That includes flour, baking powder and salt. You could add in 1-2 tablespoons of sugar if you like, but there is a lot of sweetness added to this recipe in other ways so not required. Set aside.
Whisk together wet ingredients including the egg, vanilla, 1/4 cup melted butter and 1 1/4 cup milk into a mixing bowl.
Create a well in the center of your flour mixture and pour in your wet ingredients.
Fold until well combined. Small lumps are fine. You do not want to over-mix your batter!
Heat your skillet on medium hit and spray with cooking spray to avoid sticking. An ice cream scoop works well to pour a heaping spoonful in the center of the pan. Alternatively, you can use the batter bowl or any small scoop with a spout for easy pouring.
Cook until the top begins to bubble. Cut a tip off the end of your piping bag or the edge of your ziploc bag filled with the brown sugar mixture before piping over the top in a circular motion, starting at the center. Do not get too close to the edge. Cook until edges of the pancaked are almost cooked through and flip gently to brown the other side, approximately one minute.
Remove pancake from skillet, wipe the pan clean and repeat until you have no more batter. Alternatively, you could prepare this on a large griddle so you can prepare more cinnamon roll pancakes at once.
Stack your pancakes, adding cream cheese frosting between each with a piping bag and 1M tip, if desired. (You could also skip this step or spread it on with a offset spatula or butter knife.)
Combine your powdered sugar and 3 tablespoons of whole milk in a bowl and whisk together until fully incorporated. Drizzle over pancakes. So good!

Brown Sugar Swirl Ingredients
- 4 tablespoons butter melted
- ½ cup brown sugar
- ½ tablespoon cinnamon
Pancake Ingredients
- 1 1/2 cups all-purpose flour
- 4 teaspoons baking powder
- ½ teaspoon salt
- 3 tablespoons sugar
- 1 1/4 cups milk
- 1 egg
- ¼ cup butter melted
- ½ teaspoon vanilla extract
Icing Ingredients
- 1 ¼ cup powdered sugar
- 3 tablespoons milk whole milk preferred
- 1 16 oz tub cream cheese frosting (optional)
- extra butter or cooking spray for skillet
Instructions
Prepare Cinnamon Swirl

In a small bowl, combine 4 tablespoons melted butter, brown sugar and cinnamon. Mix well. Transfer to a piping bag (or ziploc bag) and set aside.
Make Pancake Batter:

In a large bowl, combine flour, baking powder, and salt in a large bowl. Whisk until well combined. Create a well in the center and pour in your wet ingredients. Fold your flour into your wet ingredients until well combined. Small lumps are fine! Don't over mix.

Place your egg, ¼ cup of melted butter, vanilla, and milk into a mixing bowl. Whisk together.
Cook Pancakes

Heat up your skillet on medium heat lightly grease with butter or cooking spray. I use an ice cream scoop and pour one heaping spoonful into the center of the pan.

Using an ice cream soup, ladle or measuring cup, pour a heaping spoonful of batter into the center of the pan.

Cook until bubbles begin to form on the surface..

Cut tip of the piping bag and carefully pipe the cinnamon mixture in a spiral on top of the pancake, starting in the center. Avoid getting too close to the edge.

Cook until the edges of your pancake look set, then gently flip pancake over and cook for about 1 minute more until golden.

Remove from the skillet. Wipe clean, and repeat, until your batter is used up.
Assemble Pancakes

Stack your pancakes, spreading cream cheese frosting between each layer. Use a piping bag with 1M tip for a ribbon look.

Drizzle any remaining brown sugar mixture on top of the stack.
Make the Glaze

Combine your powdered sugar and milk in a bowl and whisk together. Drizzle over pancakes.

Recipe Notes
