Chewy Brownie Oatmeal Cookies

My husband is actually quite easy to predict most of the time when it comes to his treats. He has his favorites, two of them being brownies and cake-like cookies. So when my three year old begged me to bake on a rainy day, I decided to make some chewy brownie oatmeal cookies. They are super soft, just like he likes them, but they also have that special brownie taste he loves. Plus they can be made in just a few minutes without evening having to pull out the stand mixer.

Jackpot.

Except my husband surprised me and loved this a little too much. Every chance he got he’d snag one of these cookies. And since I made them on a very dreary day,  I set a few aside to photograph when I had some natural light. But after a day or two he was already asking if I’d taken those pictures yet so he could eat the rest. (He works out like crazy and can get away with this.) Lets just say I didn’t get too many of these cookies myself.

I think anytime you get this sort of reaction from your family over something you made, it is a great feeling. So if you are looking for a tasty cookie recipe that is shockingly simple, give these brownie mix cookies a go!

Chewy Brownie Oatmeal Cookies

Ingredients

  • 1 package 18.3 oz Duncan Hines® Chewy Fudge Brownie Mix
  • 1 cup quick cooking oats
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 and 1/2 tablespoons water
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. Combine brownie mix, oats, oil, eggs and water in large bowl with spoon until fully blended. Gently stir in chocolate chips.
  3. Drop by heaping tablespoons 2-inches apart on baking sheets lined with parchment paper or silicone baking sheets.
  4. Bake 12 -15 minutes or until just set in centers.
  5. Cool cookies 2 minutes on pan before transferring to a wire rack to cool completely.

Recipe Notes

Bake these cookies one pan at a time for best results.

Soft Brownie Cookies

Because we baked these at the spur of the moment, I only had 1/2 cup of chocolate chips so I added in another 1/2 cup of white chips. And since the chocolate chips are the same color as the batter, they really blend in. You can use any type or combination of baking chip you like. Next time I’m going to try peanut butter chips to get that awesome chocolate and peanut butter combination.

 

Brownie Oatmeal Cookies

These cookies are rather large. If you like a smaller cookie, simply reduce the baking time a bit. Or if you are like my husband, you can enjoy these bigger cookies and feel less remorse since you only ate one. *Ahem*

    I love to make oatmeal cookies. Tonight watching tv I wondered if I could speed the process a little by using the brownie mix I have. I’m working on a sweater that needs to get finished soon. So… I checked Pinterest and found your recipe. I am making these tomorrow!
