While there aren’t any of members of my immediate family on a gluten free diet, I know how hard it can be to stick to gluten free treats. That is why I’m happy to see Merissa Alink is back with another great recipe, this time with a Gluten Free Zucchini Brownie Parfait that is hard to resist. You can easily make this with your favorite brownie recipe or simply use regular all-purpose flour in place of the gluten free version. Vanilla yogurt is featured in this parfait, but a homemade whipped cream or other yogurt flavors would also be absolutely delicious layered in this dessert!
Gluten Free Zucchini Brownies Ingredients
To make these gluten free brownies, you’ll need the following:
- shredded zucchini
- applesauce
- water
- sugar
- vanilla extract
- egg
- vegetable oil
- cocoa powder, unsweetened
- all purpose gluten free flour
- baking soda
- pinch of salt
To make the brownie parfait, you’ll need prepared zucchini brownies along with vanilla yogurt (or ice cream) and chocolate sauce or hot fudge.
How to Make Gluten Free Brownie Parfaits
Let homemade zucchini brownies cool completely before using in parfaits. Place some yogurt into a frosting bag or in a plastic storage bag. Cut off the tip of the plastic bag and place a layer of yogurt onto the bottom of a clean glass or jar. Top with pieces of the brownies (break into large pieces with your fingers). Repeat layers until the glass or jar is full. Top with chocolate sauce if desired, enjoy cold.
While this version is topped with vanilla yogurt, vanilla ice cream or other yogurt flavors would also work well.
Gluten Free Zucchini Brownie Parfait

Ingredients
Gluten Free Brownie Ingredients
- ¼ cup zucchini shredded
- ¼ cup applesauce
- ½ cup water
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 egg
- ¼ cup vegetable oil
- 1/3 cup cocoa powder unsweetened
- ½ cup all purpose gluten free flour
- ¼ teaspoon baking soda
- pinch of salt
Brownie Parfait Ingredients
- vanilla yogurt
- zucchini brownies
- chocolate sauce syrup or hot fudge
Instructions

In a large bowl, mix together the applesauce, zucchini, water, sugar, and vanilla extract.

Beat in the egg and vegetable oil. Add in the cocoa powder, salt, and flour, and finally the baking soda.

Mix all ingredients together until well blended.

Pour batter into an 8x8 greased baking dish and bake at 350 degrees for about 20 minutes or until a toothpick inserted in the center comes out clean. Cool.
Brownie Parfait Directions
