Chocolate Chip Whoopie Pies Made Easy

Ever heard of a Whoopie Pie? Its a funny name and a delicious sandwich cookie that I first learned about last year when our family was visiting a local bakery where they had a display of pumpkin Whoopie Pies. They looked incredibly delicious, unfortunately, I don’t much care for pumpkin flavor so I decided I would make my own.

Well, it so happens I get the Pillsbury e-newsletter and there they were, Whoopie Pies! So I just had to try the recipe with a few modifications of my own.

Cookie Ingredients

  • 1 box of Duncan Hines chocolate cake mix
  • 3/4 cup water
  • 1/3 cup of vegetable oil
  • 3 eggs
  • 1 box (4-serving size) chocolate instant pudding

Filling Ingredients

  • 1 cup butter, softened
  • 1 – 7oz jar of marshmallow cream
  • 1 1/2 cups powdered sugar
  • 2 tsps vanilla extract

Preheat your oven to 350 degrees F. In a large mixing bowl, combine the cookie ingredients and beat at a medium speed for 2 minutes. Then, line a cookie sheet with parchment paper and lightly coat with cooking spray.

Using a 1/4 cup measuring cup, place large dollops of the cookie mix about 2 inches apart and bake for 13 minutes.

While the cookies are baking, combine all of the filling ingredients and whip until light and fluffy.

chocolate whoopie piesThe fun part is just finishing these little fluffy sandwich cookies with some sweet filling between two cookies. For an added little bonus you can add chocolate chips along the rim.

    Those look totally yummy!! I love all the things I’m finding that you can do with cake mix besides make cakes!

    My son has been begging me to make whoopie pies. Thanks for the fun recipe. This looks like it’s pretty simple to prepare so I can even have him help me. He’ll love it!
