Chocolate and Banana French Crepes

I can’t say for sure why, but last week I had this intense craving for a fruit crepe … at nearly midnight. To make matters worse, an hour later that craving hadn’t gone away so I was forced to go to the grocery store and experiment in the middle of the night. You see, I’ve never made a crepe before, ever! The whole idea of french crepes is completely intimidating to me but I was determined to at least try.

To start I searched out a basic crepe recipe online and found one from AllRecipes.com that I ended up tweaking a bit just for the sake of experimenting. My experience went a little something like this.

Crepe Batter Ingredients

  • 1/2 cup flour
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup water
  • 1/4 tsp salt
  • 2 TBS butter, melted
  • 1/4 tsp vanilla extract

Start by preheating a small, round skillet over medium heat (6/9 on electric stove). While the pan is getting warm, mix together all of the wet ingredients in a medium bowl. Gradually add the flour and whisk vigorously until the batter is smooth.

Brush the hot skillet with a little butter. Using a soup ladle, pour about 1/4 cup (maybe a little less) of the batter into the center of pan and tilt it in a circle so the batter spreads evenly.

Rather than watch the clock, watch the batter. Once the edge begin to brown a little and the batter looks dry it’s time to flip. Just use a regular pancake spatula, no air flipping unless you’re a pro at this or just like to eat crepes off the kitchen floor.

Let the other side brown for about 1 minutes and set the crepe aside on a plate. Each time you add new batter to the skillet, don’t forget to brush it with butter. In total, this recipe made about 8 crepes.

Now the fun part is deciding what kind of crepe you want to make. Being the sugar high mama I am, I had to go with a dessert crepe filled with vanilla pudding. I took a short cut and just used JELL-O Instant French Vanilla pudding.

I also thought some banana slices would taste incredible, and it did!

Finish the crepe dessert up by folding the edges to the center, top with more bananas and drizzle on some melted milk chocolate!

      Paula, actually the first one I ever had was the breakfast crepes from Bob Evans, which are actually good, but the quality is fast foodish, I just knew I could do better at home. You should definitely give these a try with toppings you like!

    Crepes are amazing! I had my first crepe when we had a foreign exchange student when I was in high school and I became instantly addicted! When I visited Paris on a vacation, they had crepe shops on like every corner… I was in heaven. I think I had 2 a day! This is a great new way to try them, thanks so much for sharing 🙂

        They made them in those flat press type of things… they were so massive, they had to fold them four times and then roll them up. Literally they were probably the size of an oversized medium pizza… think I gained 10 pounds there!

    Crepes are an amazing and wonderful food! I love them in both savory and sweet varieties.

    Your pictures made me crave and drool…. always a good thing! As I sat in front of the computer, wiping drool from my chin, my boyfriend only had one comment he asked me to pass on to you. VANILLA pudding?! Where’s the CHOCOLATE?! LOL…. God, I love that man!

      LOL yep, vanilla pudding. I actually had wanted to make some homemade vanilla custard but I was feeling a little lazy that day. I’m thinking I may have to try a savory version! And definitely more chocolate next time!

    Banana’s and chocolate is one of my favorite combinations. I can’t wait to try this one. I’m supposed to make a Zucchini bread tonight, we’ll see how it goes. I meant to try it this weekend but was so busy with the wedding plans.

    This looks SO GOOD. I just tried my first crepes the other day because I got a real crepe pan, but they were not quite perfect. I’m going to give these a try for sure. 🙂
