Pumpkin Granola Parfaits

Ingredients

  • 1 cup plain yogurt
  • 1 cup pumpkin puree
  • 2 tablespoons honey
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup granola
  • graham cracker (for garnish, optional)

Instructions

  1. In small bowl, whisk the honey and the yogurt until well combined.
  2. In separate bowl, whisk the pumpkin puree and the spices. Mix well.
  3. In two dessert glasses, spoon out a layer of the yogurt mixture. Follow with a layer of the pumpkin mixture and then finish with a final layer of the yogurt mixture again. (When spooning out the mixtures, try to evenly disperse it between the two glasses.)
  4. Finish the dessert with a sprinkling of the granola and garnish with a small graham cracker.

Recipe Notes

You can choose your favorite yogurt flavor. If you opt for an already sweetened yogurt such as honey or vanilla, you can leave out the honey. If you need a little more sweetness in your pumpkin puree you can also add a small amount of honey, brown sugar or maple syrup to the pumpkin mixture. Be sure to use plain pumpkin puree for this recipe. If you would prefer to use the pumpkin pie in a can, omit the pumpkin pie spice.
