These old-fashioned blueberry muffins with brown sugar and fresh blueberries, are downright irresistible. This is the only recipe you'll ever need for perfect blueberry muffins every time. Enjoy them for breakfast or as a snack - you won't be able to resist!
In a large bowl, cream together egg and brown sugar.
Add vegetable oil and milk and mix until all ingredients are well-combined.
In a separate bowl, sift flour, salt and baking powder.
Slowly add dry ingredients to wet ingredients. Mix until a thick muffin batter forms.
Fold blueberries into batter carefully.
Scoop batter into muffin cups, filling 2/3 of the way.
Bake for 15 to 18 minutes or until a toothpick inserted in the center comes out clean.
Recipe Notes
You can freeze these muffins once cooled in freezer bags or containers. Thaw at room temperature or if short on time, you can microwave for about 30 seconds or until heated through.
Variations:
Blueberry oatmeal muffins: swap out 1/2 cup of flour for 1/2 cup quick or old fashioned oats
