Old Fashioned Blueberry Muffins

These old-fashioned blueberry muffins with brown sugar and fresh blueberries, are downright irresistible. This is the only recipe you'll ever need for perfect blueberry muffins every time. Enjoy them for breakfast or as a snack - you won't be able to resist!

Ingredients

  • 1 large egg
  • 1 cup brown sugar packed
  • 1/3 cup vegetable oil
  • 1/3 cup whole milk
  • 1 ½ cups all-purpose flour
  • ¼ tsp salt
  • 2 tsp baking powder
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 400 degrees F.
  2. Add paper muffin liners to a muffin pan.
  3. In a large bowl, cream together egg and brown sugar.
  4. Add vegetable oil and milk and mix until all ingredients are well-combined.
  5. In a separate bowl, sift flour, salt and baking powder.
  6. Slowly add dry ingredients to wet ingredients. Mix until a thick muffin batter forms.
  7. Fold blueberries into batter carefully.
  8. Scoop batter into muffin cups, filling 2/3 of the way.
  9. Bake for 15 to 18 minutes or until a toothpick inserted in the center comes out clean.

Recipe Notes

You can freeze these muffins once cooled in freezer bags or containers. Thaw at room temperature or if short on time, you can microwave for about 30 seconds or until heated through.

Variations:

  • Blueberry oatmeal muffins: swap out 1/2 cup of flour for 1/2 cup quick or old fashioned oats
  • Lemon blueberry muffins: stir in 2 teaspoons lemon zest and 2 tablespoons lemon juice to the batter. Can also add a lemon glaze:
    • Mix 1-1/2 cups powdered sugar, 2 tablespoons lemon juice, 1 teaspoon butter, melted and 1/4 teaspoon vanilla extract.
    • Drizzle over warm muffins.
  • Blueberry muffins with crumb topping:
    • Combine 1/2 cup flour, 1/3 cup sugar, 1/4 teaspoon cinnamon, and 1/8 teaspoon salt in a small bowl.
    • Cut in 4 tablespoons cold butter until mixture resembles coarse crumbs.
    • Sprinkle topping over blueberry muffin batter before baking.
  • Cinnamon blueberry muffins: add 1 teaspoon cinnamon to the batter
  • Chocolate blueberry muffins: fold in 1/2 cup mini chocolate chips in with the blueberries
