Lemon Bundt Cake with Caramel Glaze

Ingredients

  • 4 eggs
  • 1 3 ounce package instant lemon pudding mix
  • 1/3 cup vegetable oil
  • 1 18.25 ounce package lemon cake mix
  • 2/3 cup water
  • 1/8 cup lemon juice
  • Caramel Glaze:
  • 1/4 cup butter
  • 1/2 cup packed brown sugar
  • 3 tablespoons milk
  • 1 cup confectioners' sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a bundt or tube pan. (I like to use Bake Easy Spray from Wilton.)
  2. Beat eggs for about one minute, or until thick. Add remaining cake ingredients. Beat for four minutes with your electric mixer on a medium speed.
  3. Pour batter into prepared pan and bake for approximately 50 minutes or until toothpick inserted into center comes out clean.
  4. Cool on wire rack for about an hour before inverting onto cake platter.
  5. To prepare glaze, melt butter, brown sugar and milk over medium heat, whisking constantly until mixture begins to boil.
  6. Remove from heat and let cool for 10 minutes.
  7. Add vanilla and confectioner's sugar. Whisk until smooth.
  8. Immediately pour or spoon glaze over cake, letting the glaze run down the sides.
