Chocolate Chunk Banana Bread Cookies

Ingredients

  • 2 1/2 cups White Lily® All Purpose Flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter softened
  • 1 cup firmly packed brown sugar
  • 1 cup mashed ripe banana about 2-3
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups quick or old-fashioned rolled oats
  • 1 cup chopped walnuts or pecans optional
  • 2 cups semi-sweet chocolate chunks

Instructions

  1. Preheat oven to 375° degrees F.
  2. In medium bowl stir together flour, baking powder, baking soda and salt.
  3. In large bowl beat butter until light and fluffy. Slowly add brown sugar and then beat additional 2 minutes. Beat in banana, eggs and vanilla, just until combined.
  4. Stir in flour mixture.
  5. Stir in oats, nuts and chocolate chunks.
  6. Drop by heaping teaspoonfuls onto ungreased or parchment paper lined baking sheet.
  7. Bake 8 to 10 minutes or until lightly browned. Cool for one minute before moving to wire rack to cool completely.
