Cake batter popcorn is a super sweet and salty treat, perfect for a birthday party or as a fun Easter snack. This bunny popcorn is flavored with vanilla cake mix, coconut, melted almond bark and plenty of colorful sprinkles! Whether you serve a bowl up to a crowd or hand it out as a party favor, no one can resist this cake batter popcorn!

Ingredients

  • 6 -7 cups popped popcorn 1 bag of microwave popcorn
  • 10 oz. white almond bark or white chocolate chips
  • 3 tablespoons vegetable or canola oil
  • 1/2 cup vanilla cake mix or yellow cake mix
  • 1/ 3 cup shredded coconut
  • 1/4 cup sprinkles

Instructions

  1. Line baking sheet with parchment paper or silicone baking mat.
  2. Melt almond bark in microwave, starting with 1 1/2 minutes and stirring in 30 second intervals after that just until melted. Stir in oil and heat treated cake mix and mix until combined.

  3. Mix in coconut and pour over popcorn in extra large bowl.
  4. Gently stir to coat popcorn.
  5. Spread popcorn mixture into baking sheet. Top with sprinkles.
  6. Cool completely until hardened. Store in airtight container or Ziploc bag.

Recipe Notes

*How to heat treat cake mix:

While many cake mixes may be safe, best to play it safe and heat treat your cake mix for this recipe. Place 1/2 cup cake mix in a microwave safe bowl.

Heat the cake mix in the microwave in 30 second increments, stirring after each interval and checking for a uniform 165ºF internal temperature.

Allow heat-treated mix to cool completely. Sift if necessary to remove large chunks.
