I’ve always had thing for custard but never ventured to make it myself. I’m not sure why as I found this custard recipe relatively simple and it turned out delicious!
The recipe stated 4 servings but I could make 6 servings of the size shown below. While I think the blueberry topping certainly makes a gorgeous presentation it does add some steps that aren’t exactly necessary. You could create a similar look and taste with slightly warmed pie filling and skip the step of having to thicken the blueberry juice with cornstarch. Next time I think instead I’ll add some fresh berries which would not only taste wonderful, it would look perfect for summer and take half the time!
Custard Ingredients
1/2 c. sugar
2 T. all-purpose flour
1/8 t. salt
1- 1/2 c. half and half cream
1 t. grated lemon peel
3 egg yolks, lightly beaten
2 T. butter or margarine
1 T. vanilla extract
Blueberry Topping Ingredients
1 can (15 oz) blueberries
1 T. cornstarch
Topping Variations
fresh berries
blueberry, strawberry or cherry pie filling
chocolate shavings
Directions
In a saucepan, combine sugar, flour, and salt. Gradually add cream and lemon peel until blended.
Bring to a boil. Cook and stir for 2 minutes or until thick and bubbly. Remove from heat.
Stir a small amount of the hot mixture into egg yolks. Return all to pan; bring to a gentle boil, stirring constantly.
Remove from heat. Stir in butter and vanilla.
Pour into parfait glasses or dessert dishes. Cool.
Drain blueberries, reserving juice. Spoon blueberries over custard.
In a saucepan, combine cornstarch and blueberry juice until smooth. Bring to a boil over medium heat, cook and stir for 1-2 minutes or until thickened.
Spoon over berries and garnish with lemon peel, if desired.
Serve and enjoy the oohs and aahs this dessert is sure to receive.
