Strawberry Mocha Delight Dessert Featuring International Delight Iced Coffee

If there is one drink that is popular in my house it is coffee, especially iced coffee. For years my husband has been making his own iced coffee but now we have an easier option that tastes great and is much less expensive than purchasing it from a coffee house! International Delight offers three iced coffee varieties in a half gallon size including original, mocha and vanilla flavors! My husband and I have fallen in love with the taste and appreciate how refreshing it is on a hot summer day.

I came up with a fun dessert recipe that utilizes this drink that is light and perfect for summer. The coffee flavor is there but it is subtle. I could honestly just eat the filling by itself and I highly recommend it as a fruit dip. Yum!

Ingredients

  • 1 pkg. (3.4 oz.) vanilla instant pudding
  • 2/3 cup International Delight Mocha Iced Coffee
  • 1/3 cup milk
  • 8 oz tub whipped topping
  • 1 round angel food cake (homemade or purchased)
  • 3 cups sliced fresh strawberries (raspberries would also be delicious!)

Directions

Whisk iced coffee, milk and dry pudding mix for two minutes.  Gently fold in whipped topping.

Cut cake into 3 layers using a sawing motion and a serrated knife. Spread filling into each layer adding half of the sliced strawberries to the first two layers. Add remaining filling and berries to top of cake. Serve immediately or refrigerate.

Mixing the iced coffee drink, milk and pudding together created a sweet base for the frosting. The combination of the subtle coffee, vanilla, strawberries and angel food cake was perfect for our 4th of July celebration yesterday.

It is so delicious, I dare you to eat just one slice of the dessert or drink one glass of this iced coffee drink!
