To make these tasty mini strawberry galettes from scratch, you’ll need the following ingredients:
Pastry Ingredients:
- all-purpose flour
- salt
- sugar
- cold butter, cut into cubes
- sour cream
- 1 egg beaten – for egg wash before baking
Strawberry Filling Ingredients
- fresh strawberries, hulled and halved (quarter if large)
- sugar
- cornstarch
- orange juice
- powdered sugar for garnish (optional)
How to Make Homemade Pastry Crust for Galette
To make pastry crust from scratch that is flaky and delicious, start by gently whisking flour, salt and sugar in a large bowl. Add the cubed butter and use a pastry blender to cut it in until it resembles coarse crumbs. Don’t have a pastry blender or don’t like using them? No problem! You can also use a fork or your hands to combine the butter into the flour until it resembles coarse crumb.
Add the sour cream. (You will want to use the full fat variety for this recipe. Don’t skimp on the fat! ) Use a fork to mix it into the flour until they are combined. Use your hands to form the dough into 8 equal balls. Sprinkle dough balls with flour, wrap in plastic wrap and refrigerate for at least one hour.

How to Make Fruit Galette
To make your strwberry galette, take the 8 balls of dough from the fridge and let sit a couple of minutes. Pre-heat your oven oven to 375 degrees Fahrenheit. In a medium bowl mix together strawberries, sugar, cornstarch and orange juice. Set aside.
On a floured surface roll each of the dough balls out to a rough circle about 5 -6 inches in diameter. Put the pieces of rolled dough onto parchment paper lined baking sheets. Place about ¼ cup of the strawberry mixture into the center of each dough circle leaving a 1 inch boarder around the edge. Use a slotted spoon to scoop out the strawberries so you don’t get too much of the liquid. No one wants a soggy crust!
Fold the edges of the dough up so that they just reach the strawberry mixture. Don’t worry if they are not perfect and look a bit messy it adds character. Brush the pastry with the egg wash.
Bake for 25 to 40 minutes, until the pastry is golden brown and the filling is bubbly. Remove from oven and cool completely on a wire rack. Dust with powdered sugar.
