If you are looking for something a little outside the box for your 4th of July celebration, consider these patriotic butter cookies.  They will transport well and no worries about them melting in the hot summer sun.  It doesn’t hurt that they are very rich and tasty. This is one quick and easy to make recipe!

Patriotic Red White and Blue Butter Cookies

Ingredients

1 cup sugar
1 cup butter, softened
2 tsp. vanilla
1 egg
2 1/3 cup flour
Pinch of salt
red food coloring
blue food coloring

Directions

Preheat the oven to 350 degrees.

Combine the sugar, butter, vanilla, egg and mix well.

Slowly fold in the flour and pinch of salt.

Divide the cookie dough into thirds. Set the white dough aside and add 2-3 drops of red food coloring to one portion of dough, mixing well. Depending on how red you want your cookies you can add more if needed. Repeat with the third portion of cookie dough and the blue food coloring.

Drop by rounded teaspoon onto a lightly greased cookie sheet. Bake for 7-10 minutes.

*Makes approximately 2 dozen cookies. 1 cookie = 1 serving. Store in an airtight container 1-2 weeks. You can also freeze for 2-3 months. Simply thaw when ready to serve.
