Peppermint Mocha Bundt Cake Featuring International Delight #IDBaking

I love coffee. But as you might have guessed, I like my coffee sweet! My favorite coffee is typically a flavored one such as hazelnut and I love pairing that with some flavored creamer! But did you know you can incorporate flavored creamers into your baking?

One of my favorite cakes is the bundt cake. It is just as easy to make as a traditional cake but comes out looking so beautiful without any extra effort. I decided to include Peppermint Mocha, a seasonal International Delight coffee creamer flavor into the cake to try out something new! And wow, is this cake moist and flavorful! It did not disappoint!

Ingredients

1 (18.25 ounce) package chocolate fudge cake mix
1 (5.9 ounce) package instant vanilla pudding mix
4 eggs, beaten
1/2 cup vegetable oil
1/2 cup International Delight Peppermint Mocha Gourmet Coffee Creamer
1/2 cup white sugar
1/2 teaspoon peppermint extract (optional)
1 (8 ounce) container sour cream
2/3 cup mini chocolate chips
5 hard peppermint candies, crushed

GLAZE:

1 1/2 cups confectioners’ sugar
3 to 4 tablespoons International Delight Peppermint Mocha Gourmet Coffee Creamer
1/8 teaspoon salt
1/2 tablespoon butter

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a Bundt pan.

In large a bowl, mix the cake mix, pudding , eggs, vegetable oil, cream, sugar, and extract. Gently fold in the sour cream and chocolate chips. Pour batter into the prepared pan.

Bake in the preheated oven for 53 to 58 minutes, until toothpick inserted into cake comes out clean. Cool in pan for 10 minutes before transferring to cooling racks.

To glaze, melt butter and stir into ingredients until thick and creamy. Pour glaze over cooled cake and sprinkle with crushed peppermint candy.

This is definitely one of the most moist cakes I’ve ever eaten. Feel free to experiment with different creamer, cake mix and pudding flavors such as spice cake and pumpkin pie spice creamer.
