Happy Memorial Day! Hope you are all celebrating the deserving individuals for which this holiday is intended and enjoying some family time with some great food! What better way to do that than some patriotic red, white and blue gelatin and fruit parfaits? These are perfect for Memorial Day or 4th of July!
I couldn’t find a recipe available that had exactly what I was looking for so I made up my own. I wanted a cream cheese layer for the white section but didn’t see that floating out on the interwebs. (That should come as no surprise if you know how much I love cream cheese!) I was stumped for a few seconds thinking of how to transport them easily but then I decided to try my cupcake carrier. It worked beautifully!
While these are a bit more time consuming because you are creating individual serving sizes, they are certainly more fun. They were a big hit, especially with the kids at our family get together yesterday.
If you are considering other toppings, raspberries, blueberries or patriotic colored or themed sprinkles would also look fabulous.
Ingredients
(10 servings)
2 cups boiling water
1 pkg. (3 oz.) JELL-O Berry Blue Flavor Gelatin
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
2 cups cold water
1 pkg (8 oz) PHILADELPHIA cream cheese, softened
1/2 cup sour cream
1/4 cup sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 and 1/2 cups fresh strawberries, halved
1/2 cup fresh blueberries (if desired)
Directions
Mix strawberry gelatin according to package directions. Using ten 9 oz. clear plastic cups (or other small, clear glasses) pour approximately 1/4 cup of red gelatin into each glass. (You may have a little excess left over. Simply divide remaining among glasses.)
Refrigerate until firm. At least 1 hour.
Beat cream cheese, sour cream and sugar until smooth. Divide mixture among parfait glasses. I found my 3 tablespoon muffin scoop worked great and was just the right amount per cup!
Gently spread cream cheese mixture to create an even layer in cup using the back of a small spoon. A baby spoon worked great for me. To make it easier to spread, start from the center and gently spread to the side of the glass before smoothing out the rest of the mixture. This will keep it from breaking the red layer below. Wipe away any excess from the sides of the glass to keep layers looking nice.
Refrigerate at least one more hour.
Prepare berry blue gelatin according to package directions and add to parfait glasses following directions as above for strawberry gelatin. Refrigerate until firm and until serving.
Before serving, add strawberries and blueberries (if desired) and top with desired amount whipped topping.
