Inevitably with the new year comes the desire for many of us to lead healthier lives. Whether that includes actually going on a diet or simply eating healthier foods, many of us are looking for ways to cut back. And with cutting back, dessert can take a back seat. It really doesn’t have to. It is possible to indulge in something that doesn’t hurt your waistline with desserts like this scrumptious Pinapple Angel Lush Dessert  from Kraft Foods.
I made this beauty over the 4th of July and it was a huge hit with everyone. Best part? It was super simple and made a fabulous presentation. I made the angel food cake myself but it is easy to cut corners by buying one pre-made or using dessert shells instead. If you want to change this recipe up, you can cube the cake and layer, making individual parfaits (will make 12 servings) or a colorful trifle. The filling also makes a great fruit dip. So many possibilities!
- 1 can (20 oz.) DOLE Crushed Pineapple in Juice, undrained
- 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
- 1 cup thawed COOL WHIP Whipped Topping
- 1pkg. (10 oz.) round angel food cake or 2 pkg. (5 oz. each) dessert shells (12 shells)
- 2 cups mixed fresh berries (strawberries, blueberries and raspberries)
Whisk pineapple and dry pudding mix until well blended. Fold in whipped topping.
Cut cake into 3 layers using a sawing motion and a serrated knife. Spread filling into each layer and on top of cake. Top with berries.
170 calories, 2 grams of fat, 25 grams sugar, 1 gram of fiber per serving. (10 servings)
Reduce this recipe even more by using fat free vanilla pudding and Cool Whip Lite or Sugar Free.
