With all these choices, it can be hard to know where to start! If you have a few standby recipes to make every week like these lemon fat bombs it makes it a lot easier. Keto fat bombs are pretty quick to make and use ingredients I usually always have on hand. Almond butter fat bombs are always awesome to have in stock.
Lemon Fat Bomb Ingredients
To make these lemon cheesecake fat bombs, you’ll need a few key ingredients. This recipe uses honey, however most of the fat bombs I feature use stevia instead. Feel free to swap out the honey with your favorite keto friendly sweetener if you’d like to cut down on the carbs.
- 1/2 cup coconut flour
- 1/2 cup softened butter
- 3 tablespoons honey or your favorite keto friendly sweetener such as stevia or monk fruit sweetneer. (Be sure to use the proper equivalents as 1 tablespoon of honey is not 1 tablespoon of stevia).
- 4 ounces cream cheese, softened
- salt
- a lemon
- fresh blueberries
To make assembly easier I also recommend having some individual silicone baking cups as your mold and a metal cookie dough scoop to easily assemble these low carb fat bombs.I love the convenience and variety I can find for these items on Amazon!

How to Make Lemon Cheesecake Fat Bombs
To make these cream cheese fat bombs, you’ll have two separate layers. To start, make your crust with coconut flour, butter, honey and just a pinch of salt.
Using a 2 tablespoon volume metal scoop, add your crust mixture to six silicone baking cups and gently press down.
Next you’ll want to create the cream cheese filling. I recommend using a hand mixer to combine well.
Use your metal scoop to into prepared molds and gently smooth with the back of a spoon so the tops are even.
Blueberries work great as a topping for this lemon cheesecake fat bomb but other berries would also be pretty!
Keep in mind all fat bombs should be frozen first because these types of ingredients are soft. Once frozen, they should be kept in freezer or in fridge and not left on counter at all. I would recommend freezer.

Ingredients
Crust Ingredients:

- 4 ounces cream cheese softened
- 1/4 cup butter softened
- 1 tablespoon fresh lemon juice about half a lemon
- 1 teaspoon lemon zest
- 2 tablespoons honey (or your favorite Keto friendly sweetener, using the proper equivalents. )
- fresh blueberries
Instructions
Crust Directions:

Mix flour, butter, honey and salt together in a bowl. Use the back of the spoon to combine all ingredients. Use a 1 tablespoon portion scoop to scoop into 6 silicone cupcake molds. Press into the bottom with your fingers or the back of a spoon. Set aside.
Filling Directions:

Combine cream cheese, butter, lemon juice, lemon zest and honey in a bowl. Use a hand mixer to combine well. Use a two tablespoon scoop to scoop filling into prepared molds and gently smooth with the back of a spoon. Top with fresh blueberries
