Sweet Chocolate Chip Waffle Cookies

Ingredients
  • ½ cup packed brown sugar
  • ¼ cup sugar
  • ½ cup melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ½ cup flaked coconut
  • ½ cup miniature (or regular size) milk or semisweet chocolate chips
  • ½ cup chopped cashews (optional)
  • Confectioner's sugar for dusting (optional)
Instructions
  1. Combine brown and white sugar along with egg, vanilla and butter in a large bowl.
  2. In a separate medium bowl combine flour, salt and baking soda. Add to sugar mixture gradually, stirring after each addition.
  3. Mix in coconut and chocolate chips along with cashews, if desired.

  7. Preheat waffle iron and spray with cooking spray. Drop cookie batter by tablespoons 1 inch apart or in my case, 1 in each section of my Belgian waffle maker.
  8. Drop waffle lid down and cook for 1 to 2 minutes, until golden brown. Very carefully remove from iron. Add to wire racks and cool completely. Dust with confectioners' sugar if you like.
