With the start of cooler temperatures, it is easy to start thinking about soups and hearty meals for dinner. But just because fall is just around the corner, it doesn’t mean you have to give up your grill. Today we enjoyed a sunny day and a high of 72 degrees. It was a perfect time to celebrate these last days of summer with a delicious meal on the grill. I was challenged to come up with a tasty grilled recipe using Tyson® Fresh Chicken, and my mind immediately went to sliders. Who says sliders only have to be made with beef?
I combined my very favorite hamburger fixings like lettuce, tomato and red onion, and paired it with my favorite chicken sandwich toppings like bacon and honey mustard. Stack them together on a small sweet roll, and you’ve got a recipe for awesomeness.
(Did I mention these turned out awesome?)
I started out with Tyson Fresh Chicken. I’ve heard it is the next best thing to being fresh off the farm because it is all natural* with no added hormones or steroids**. As an added bonus, it arrives at the store fresh, delivered within days from leaving the farm. This is perfect for creating a delicious meal that I can feel good about.
Ingredients:
1 package (17 oz) Tyson Trimmed & Ready Premium Thin Sliced boneless skinless chicken breasts
10-12 (1 oz size) Hawaiian sweet rolls
12 slices bacon, cooked and cut in half
3 slices deli cheddar cheese, quartered
1 small red onion, sliced
2-3 Roma tomatoes, sliced
Romaine lettuce
honey mustard (or your favorite sauce)
Directions:
Brush grill rack with vegetable oil. Heat coals or gas grill.
Place chicken breasts in large Ziploc bag. Pound to flatten chicken until even thickness.
Using kitchen shears, cut chicken into three to four equally sized pieces. (Size will depend upon the size of the breast. You want them a bit bigger than the bun.)
Grill chicken approximately 2-3 minutes on each side on medium heat, or until thermometer reaches 170 degrees F.
Add cheddar cheese and continuing cooking until cheese melted. Remove from heat.
Place rolls on grill and cook until lightly toasted.
Make each slider by adding chicken, one slice bacon (two halves), onion, lettuce, tomato to the bun. Offer honey mustard on the side or spread on the inside of the bun.
Serve immediately.
Servings: 5 to 6 servings, 2 sliders each
I picked Tyson Trimmed & Ready Thin Sliced Chicken Breasts, since I knew I’d be pounding them down anyway. Each piece of Tyson Fresh Chicken is hand-trimmed for convenience, so they did most of my work for me.
I love the honey mustard, but consider offering several different sauce options for your family or guests including barbecue sauce, ranch dressing or Dijon mustard. Theses sliders would be perfect for your next game day celebration!
TIP:
These sliders taste best served immediately, so have a station set up to immediately assemble them once the chicken is cooked. (Asking someone to help is a great option!) You can also grill the buns as soon as the chicken is close to being done to save time.
