Knox Blox

With hot summer days making it impossible to use an oven, I love cold refreshing treats that are easy with no baking necessary. My mom has made these a tradition since I was little. Unlike Jello Jigglers, Knox Blox are much firmer and easily transported. No fork or spoon required. Sugar free Jello can be substituted for an even lighter snack.


4 envelopes of Knox unflavored gelatin

3 pkgs (4 oz) flavored Jello gelatin

4 cups boiling water


Mix Jello and Knox gelatin into a bowl.

Add boiling water. Stir until dissolved.

Pour into 9×13 inch pan and refrigerate 4-5 hours or until firm.

Cut into squares or use cookie cutters for fun shapes!

    This brings back memories…….instead of water use fruit juice, it makes them a little healthier.
    Another trick is to add a 7UP type soda to make them fizzy.
    I will never forget the first time I had regular jello at a friends house. I was sure her Mom had messed it up. You see my Mom always made ours special by adding juice and a llittle soda pop, but I thought everyone made their jello that way.
    Nothing better then sticking your tongue through the jello and tasting the “fizz!”

    • There are directions on the Knox package which does substitute juice for the water but then doesn’t use any Jello. I haven’t tried the 7 up version but that sounds yummy!
